      cut the butter into i tbsp chunks and put it in the freezer for ~15 minutes and then use a pastry cutter to mix it into the flour and it will come out perfect every time. even if you have hot hands

    I watched her cut off the extra pie dough and thought "Yummy! That's the best part! Sprinkle some cinnamon and sugar on it and bake it in the oven, and then don't be surprised if the next time you make pie you 'accidentally' make extra dough."

    My mom used to own a bakery. She never told me pie was hard so I never thought of it that way. I've never made a 'perfect' pie in my life, mind you. If I wanted a perfect pie, I'd go buy one :P
    I live in a hot and humid part of the world so a thing I do is make pie dough in a double bowl with iced water on the outside.

    Okay so I’m confused 😂. My grandma taught me to roll the dough out in plastic wrap, so as to not add any more flour. But I hear from many other people that using flour to roll it out is a-okay. What’s better to do?

    😂 Lol I died and felt called out when she said "if you're one of those people who's great at braiding dough, then I don't think you should be watching this channel" because I just made a pie this afternoon and am good at doing things like "braiding dough" but I also love this channel. Just because I'm often asked if there's anything I can't do, doesn't mean I don't also love bon appetit.

    I made the pie it was amazing the crust was perfect and the taste of the filling was complex. The only things I changed from the recipe from the website was I used an 8 inch pan because its all I got and I was a little short with my lime juice due to very small limes. The only changes I would make if I were to make it again is used more cornstarch like 1/2 cup because when I cut into it four hours later it was swimming in juices.

      The fridge is actually where you really need to rest it. The butter needs to stay cold for ease of manipulation. Good luck!

    If you have hot hands then I say use tools and or the food processor. They have pastry tools for exactly that.

    CARLA, the BA recipe for the pie crust is magnificent. I knew because of the altitude in Salt Lake City I had to adjust the liquid measurements but other than that it took me 45 mins to make 4 crusts and they turned out excellent. Definitely one of the best crusts I’ve ever made and they turned into wonderful apple and pumpkin pies for Thanksgiving. Thanks Carla and BA

    Everything seems perfect, but you didn't say how much flour approximately. You said you eyeball the butter, but could we also have an approximate quantity? We beginners need information. What if my dough is too little and I can't make a double crust? Since you mentioned how many tablespoons you added to the dough, I don't get why you didn't mention the previous things.

    can I just say that when I need that mom/teacher/love of my life vibe, I immediately go to a video starring Carla. she’s homey, she’s wise, she’s just a normal, curly haired, bangin’ lady with an aptitude for food and stuff. I love that she’s not perfect. I love that she’s humble and she loves food. it all shows. I love Carla. I will be purchasing her cook book. I support women in cooking who are living their lives and creating relatable content.

    Oof. As someone who works at a farm stand and bakes pies all day, this whole video is soooo cringe worthy! No offense buuuttttt if you use crisco instead of butter in the dough and add water after mixing those together it will be much smoother and you don’t have to worry about it melting, also with the water and crisco you won’t get as many cracks in the side of the dough because it will be well moistened. I agree though by turning the dough every couple of rolls works great! You can also just flower it when it is all rolled out and fold it on itself into a half circle and pick it up with your hand and the dough spatula and then put it in the pie plate. It is much much more efficient that way!!

    for hot hands just dip them into some ice or very cold water before handling the dough. Might be annoying but it will keep the temp down long enough to handle the dough for a while.
